Chimichurri Pork

This is, admittedly, an involved recipe. But the chimichurri is SO good it keeps me coming back. Make the chimichurri ahead of time and let it build all those flavors. Get the potatoes in the oven, Brine the pork, Make the salad and vinaigrette. Bake or grill the pork. ENJOY!

Not being one to plan ahead enough to make pot roast in the crock pot or on stovetop, I searched high and low for YEARS for an Instant Pot recipe. Unfortunately I didn’t like ANY… until a friend introduced me to this one. It’s a keeper! (If you prefer pot roast in the crock pot here’s one you can try.)

With everyone in the house sick, hubs filled in for me and made this for us this week. It was DELICIOUS.
He doubled the veggies/apples/bacon. You won’t miss a typical starch with all that goodness on your plate.

Serve with fries/roasted potatoes and broccoli with BUTTA and sea salt!
Tip: skip the bun. They are usually filled with terrible ingredients and really just useless filler in a meal that can throw off your blood sugar. Sure, a bun can be a helpful “vehicle” to eat when out and about, but we don’t need that at home. Still top with all your favorite toppings and just use a knife/fork to scarf them up.

With some more involved recipes this week I wanted another easy one to prep.
The sour cream AND cheese in this recipe would not work great for my family. So I pivot with either dairy free sour cream or Kitehill’s unflavored almond milk yogurt. No one can tell a difference OR experiences digestive upset after the meal. So here’s your reminder that it’s ok to tweak recipes as needed for your family and health needs.
