Creamy Chicken Florentine

YUM. I ended up doubling this, so it took a little longer to prep than I anticipated. But it was worth it! I used all chicken broth (with the Dijon mustard as suggested by the author), and this time I even used part heavy cream along with my usual cashew milk. It’s delicious as leftovers, too!


Grilled Cheese & Lentil Soup

Remember I mentioned prioritizing protein in last week’s email? Well, here’s a great example of a meal that typically includes very little protein. So I make a point to add it in where I can.

Usually that’s some sort of ham or turkey on the grilled cheese. This time I chose lentils for the soup because they’re a great source of plant-based protein. It came together pretty quickly and was warm and cozy for this cold weather.

CHRISTMAS salmon? Yep. I feel like I was robbed of Christmas thanks to being down with the sickness. So I’m over here trying to stay festive even though it’s January. :) Besides, it’s not actually Christmas-y - just a different option for salmon.

Tip for the rice: the recipe is A LOT, so I halved it. And to simplify I used onion and garlic powders instead of chopping the fresh versions.


Rump Roast

Whether you pick the Instant Pot or crockpot, this recipe is just SO easy.

My rump roast was a little over 2.75lb, so I knew it was going to take a little longer to cook than what was listed in the recipe. I cooked mine for 55 min and it was perfect.


Everything Bagel Chicken

This was my first time brining chicken, and I’m sold. SO juicy! Add in how much flavor the everything bagel seasoning adds, and this was a winner for me.

We used Toby’s Ranch dressing as a dip, which I get at my fav store, Sprouts. If you can’t find Toby’s just be mindful of ingredients. Soybean oil is one to avoid.
