Shrimp Fajitas

Served with tortillas (I like Siete’s cassava flour tortillas) or tortilla chips and whatever toppings you want… salsa, guacamole, cheese, lime, etc.

These come together really quickly, so plan ahead. Marinate the shrimp, slice the veggies, cook the veggies, prep your toppings, heat the tortillas, cook the shrimp. Voila… quick and delicious meal.

I wanted to make something this week using curry powder after adding it to last week’s shopping list. This is YUMMY, but fair warning… it’s a bit spicy. And don’t skip the cucumber salad. The warm, spicy meal needs the lightness and crunch. Plus, it’s just downright good, even in these winter months.

I was craving a nice familiar meal, and this fit the bill perfectly. Don’t skip the meat… we want that protein to offset the carbs of the pasta. Reminder: this is an Instant Pot recipe. Since it took me a LONG time to find a recipe I love, I don’t have an alternative. Make your usual spaghetti if you don’t have an IP.

Instead I pivoted and made another I’ve made a million times because I had the ingredients on hand. I still left this one here, though, because I really wanted to try it! This is just so easy to make - AND delicious! I popped some chicken breasts in the Instant Pot with chicken broth and spices, but you could definitely just shred a rotisserie chicken instead. If you don’t make your own pesto (no shame there), take a close look at the ingredient list. If it’s not an actual FOOD, pick another one. Oh and don’t skimp on the veggies… load ‘em up!
