Chicken Carnitas Bowls

Think of this like a DIY Chipotle bowl: chicken, rice, beans, sauteed veggies, and any toppings you like: cheese, cilantro, salsa, guacamole!
This is an Instant Pot recipe. To bake it instead, use all the same ingredients and bake until done at 375 for 25-35 min. For the beans, I toss them juice and all in a pan and warm up with taco spices like cumin and garlic powder. For the veggies, warm up some avocado oil and saute until cooked but still crisp. YUM.

I didn’t actually use this full recipe. We got a Blackstone a while back and are still perfecting our smash burger technique. So I just used the burger instructions and WOW… it won’t be the last time. But I admit… that baconnaise does sound DE-LISH. If you try it use my FAV mayo recipe (to avoid yucky ingredients in storebought) and let me know how it turns out!

It’s baaaaaack! I tell you… If I go too long without serving this in my house I start getting QUESTIONS. It’s SO easy and SO delicious, I don’t argue… I just add it to the menu. Here’s a slow cooker version if you don’t have an Instant Pot for the original recipe (but I REALLY hope you’ll try the IP someday…).
