Peruvian Chicken with Green Sauce

Recipe By: Delish

Rating: 5 stars out of 9 ratings

Serve with: fries (or roasted potatoes) and cauliflower with butta!

SO SO SO good. That’s all I have to say. Even my daughter said, “Make that again. I really like it.” And the green sauce shoots the dish’s nutrient density through the roof! I will admit I used chicken breasts instead of thighs because thighs just aren’t my family’s thing. Either way, this is a must-try!

Macadamia Crusted Mahi

Serve with mango salsa, rice pilaf, and roasted broccoli

Feeling a little yearning for summer right about now? Me too. This popped up on my radar, and it reminded me of a trip to some tropical island where it’s nice and warm so I had to give it a try. YUM. Make the salsa first and let those flavors mix and mingle. Then the rice, broccoli and fish. Then, enjoy your tropical rendezvous.

Serve with mashed potatoes and sauteed cabbage

From the tropics to a comforting stand-by… gotta love variety, Note that I really don’t think you need the brown sugar in the glaze. Ketchup is already sweet enough, so I skip it. Also, be mindful of the BBQ sauce you use. I somehow ended up with sugar free and, well, let me just say I’ll get a new bottle ASAP.

Pork Diablo

Serve with rice and sauteed green beans

Don’t let the horseradish scare you… my whole family LOVES this sauce. And it’s just so dang easy to prepare. That’s probably what I love most about it. Caution: I think the stated cook time is too long. Aim for 145 degrees, which my oven gets to well sooner than written.

Chicken Detox Soup

Recipe By: A Spicy Perspective

Rating: 4.98 from 284 reviews

I don’t choose this soup because it’s a detox soup, but I sure do count that as a benefit. There’s no reason to keep “detox” to every now and then anyway. Keeping recipes like this in the rotation is smart for ongoing health support. But don’t expect it to be a drag just because it’s healthy. It’s chock full of simple ingredients AND tastes fantastic. And ohhhh the leftovers…. they’re even better!
