Serve with mashed potatoes (optional, there are potatoes already IN the stew) and cucumber salad to lighten up a heavy meal.

There ARE a few steps to this, and it takes 3+ hours to cook. SO plan this for Sunday. I fell upon this and, with it being the beginning of March and still cold in many places, I just couldn’t resist giving it a try. And let me tell you… it’s SO worth the time and effort. I’ll absolutely make it again. The whole family loved it.

Serve with: rice and carrots (either roasted or boiled and topped with delicious butter and sea salt)

I wanted to try something different from my usual, and this did not disappoint. Broiling at the end is a must, as is some gravy. While you carve the bird use the drippings and half of the cooking liquid/half water. Go ahead and add some butter at the end. DE-LISH. Here’s an alternative recipe if you don’t have an IP.

Serve with: baked fries (roasted potatoes), mixed veggies with butter and sea salt; no bun but all the condiments/toppings you want

Tip: With simple meals I especially focus on quality ingredients. For me that looks like Applegate Farms hotdogs, frozen fries by Actual Veggies (or another brand with ingredients that are actual food - and NO seed oils), and plenty of mixed veggies on the side.


Broccoli Cauliflower Soup w Ground Turkey

No rating listed but I give it 5 stars for simplicity, leftovers, yumminess!

Surely delicious on its own, I need it to have more protein for my fam. So I just brown 1lb of ground turkey, then add the onions and garlic, then proceed with the recipe as written. It’s SO easy and fast. You can’t beat it for a weeknight meal - and then lunch - or even breakfast! (#tryit!) - the next day.

I was REALLY pleasantly surprised how quickly and easily this came together. Get the green beans going, then the rice. Once the green beans are getting tender start the fish. I doubled the sauce because we’re a sauce-loving family, and before I knew it we were sitting down to eat. Don’t skip the parsley… it adds great flavor and really boosts the nutrient density of this meal! YUM.
