I don’t serve a starch with this… I just let it be a hearty protein and veg meal. It’s not really saucy enough for rice, and I often don’t want to bother with potatoes. I do double (maybe even triple) the green beans and all parts of the sauce, and my family doesn’t miss a starch at all.

As usual… make ALLLL the bacon because it really does make everything better.

A special meal for St. Paddy’s Day! But WARNING: corned beef is generally loaded with chemicals like sodium phosphate, sodium erythorbate, sodium nitrite, and the ever-mysterious “flavorings” that I try to avoid in my food. I MIGHT go big and brine my own but if I don’t have time I’m going to let it go for ONE meal. After all, food IS meant to be enJOYed. Note: I also don’t trust what’s in the spice packets so I included ingredients on the shopping list to make your own. If you’d prefer to use a slow cooker, here’s a recipe haven’t yet tried.

I can’t recommend enough that you use this simple teriyaki sauce for this recipe. It’s super easy and uses clean ingredients you probably have in your pantry.

I had some leftover cabbage from last week, so I threw that in the oven to roast with toasted sesame oil and sesame seeds - and I will 100% do that again. You could even roast the broccoli right along with it instead of steaming it!

Serve with roasted potatoes and sauteed spinach

The steak comes together REALLY fast so here’s how I prep this meal to make sure everything is ready at the same time AND the steak doesn’t overcook. 1) Get the potatoes cooking. 2) Prep the steak and ingredients 3) When the potatoes have about 10 min or so left, put the spinach on. 4) Whip up the steak last.

March 20 is the first day of spring, and I’ve been WAITING and waiting to bring this one back to my rotation. It’s SO easy and SO delicious. You might see it pop up a couple more times before summer.

I do make a couple tweaks. Like last week, I add 1lb of ground turkey to boost that protein. I also can’t find frozen artichokes I like (and I’m not bothering with fresh), so I just add in extra of another veg. DE-LISH!
