When your daughter comes home with stone crab claws you make a meal out of them. First time doing this myself and it was YUUUUMMY. The Cajun butter was my favorite part - I put it on everything. I did skip the hard boiled eggs though. That just seemed odd to me and was one more step I didn’t want to make.

This is my at-home version of a Chipotle bowl: chicken, rice, beans, sauteed veggies, and any toppings you like: cheese, cilantro, salsa, guacamole! Even better, the whole family loves it and asks why we don’t have it more often.
This is an Instant Pot recipe. To bake it instead, use all the same ingredients and bake until done at 375 for 25-35 min. For the beans, I toss them, juice and all, in a pan and warm up with taco spices like cumin and garlic powder. For the veggies, warm up some avocado oil and saute until cooked but still crisp. YUM.

I prefer to get pastured ground meat when possible and add my own “Italian sausage” seasoning minus the fennel since my fam doesn’t love the flavor. Tip: I also prefer beans from pouches to avoid the BPA in cans. My fav store, Sprouts, has pouches from the Green Valley brand.

My good friend and fellow NTP, Amy, shared this recipe with me, and it’s absolutely delicious! I served mine on top of a baked sweet potato, which the same 17yo refused to eat. 🙄 The rest of us LOVED it, though. If you go with a bun, I recommend Canyon Bakehouse gluten free and, even better, eat only half the bun to keep it more protein-focused. P.S. don’t fear the “paleo” label… that just means REAL ingredients.
