My husband requested this for a birthday week meal. Ask and ye shall receive, especially when it’s SO easy to put together. Use any ground meat and beans you’d like, and serve with your favorite chili toppings and accompaniments.

I cooked this differently this time. Instead of browning the meatballs, I baked them. I know, I know… browning adds delicious flavor. Sometimes I just don’t have the time or patience for it. And it was still delicious! Bake them at 400 degrees for about 15 min, do whatever else you need for the meal, add the meatballs and all their juices to the sauce, and let them simmer until cooked through. DE-LISH.

Eggs your way, bacon and/or sausage, French toast
When dad’s away my girls and I eat breakfast for dinner! Easy to prepare, but breakfast can easily become carb-heavy. I flip that by prioritizing the protein and healthy fats in the eggs and bacon/sausage, leaving the French toast as more of a side dish. My latest is sauteeing whatever veggies I have on hand to have with the eggs. This week it was onions and broccoli with some fresh sliced tomatoes. What an easy way to add nutrients, flavor, and texture!

Don’t skip the brine… makes it SO juicy! The the Everything Bagel seasoning adds a TON of flavor. Super quick and delicious dinner for a weeknight.
If you’re a saucy family like we are, try Toby’s Ranch dressing as a dip. I get it at my fav store, Sprouts. And if you can’t find Toby’s just be mindful of ingredients. Soybean oil is one to avoid.
