We had something one night this week that prevented me from being home to cook. These are the times I really love my Instant Pot. The pork was ready to go when we got back, so I made the rice, and brought the pressure up to 0 minutes (yep, you read that right) for the cabbage while the rice cooked and I shredded the pork. Of course a slow cooker can help in these times, too, so here’s a slow cooker version if you don’t have an IP. Either way, no takeout panic here!

Spring Minestrone Soup

I told you you might see this pop up again before summer… and here it is. It’s THAT good and THAT easy.

Same tweaks to the recipe this time: I add 1lb of ground turkey (or you could use ground chicken) to boost the protein. And because I can’t find frozen artichokes (and I’m definitely not bothering with fresh), I just add in extra of another veg. This time it was extra asparagus.


Smoked Sausage

Serve with fries or roasted potatoes and roasted/steamed broccoli

I like the Kiolbassa brand of smoked sausage and tend to put them on the menu when they’re on sale. I try to keep most of the recipes I make (and suggest to you) pretty quick and easy, but this is one of the easiest of them all!

Get your potatoes (and veg, too, if you’re roasting them) in the oven, wait about 15 minutes or so, get the sausages started, and finish up with steaming the veg if you’re going that route.

Chicken Pad Thai

Ok so this isn’t true Pad Thai. It’s technically Whole 30 - so no starch. But lemme tell you. It’s packed (and I mean PACKED) with so many hearty vegetables and flavors… I didn’t miss noodles or rice at all. I even had it leftover for lunch not once, but twice. It came together fast, too. This will definitely stay in my rotation, and I’m even thinking about whipping it up for breakfast sometime.

Tip: Double the spinach in the recipe so you don’t have to make an extra side.

I actually used cod for this because I already had some in my freezer. It was still delicious. Actually… this felt… decadent. Yet it was SO easy. I tend to shy away from cooking fish stovetop. It just always tends to fall apart on me. The recipe author does a great job of walking you through how to cook it, though. Combined with the beans and spinach - DE-LISH!
