But isn’t pizza “unhealthy”? Not if you get the right ingredients! Like… Don’t skimp on the chicken so you’re getting a good amount of protein. Then make sure the remaining toppings are made from clean, non-chemical/preservative/additive ingredients, which is where pizza can go really wrong. Read those labels! And ideally find a gluten-free or at least all-food crust.

Pork Tenderloin is just such an easy thing to make, but I like to switch up the sauces. This was a good one that felt a little fancy thanks to the wine. And easy too! Get the potatoes roasting, then the green beans cooking. Sear the pork, get it in the oven, and make the sauce. Perfect for a weeknight!

I made this a little different from the written directions. I mixed all spices and the EVOO, mustard, and syrup together in a bowl, then tossed all the veggies (including an extra couple bell peppers) and chicken (cut into slightly smaller pieces) into the sauce. I don’t love parchment paper anymore (a story for another day), so I just laid everything out on my fav stainless steel baking sheet with no sticking issues at all. It’s hearty, easy, fast, and delicious!

Tip: Plan ahead to soak the beans or just use 4-5 cans of your favorite beans (even a variety) drained/rinsed instead.
Easter got me thinking about ham, so here we are. The leftovers are pretty awesome, too… I love it when I don’t have to think about lunch (or breakfast!) for a couple days! I think I might add some spinach or another green in here next time for some extra veg. If you add some, let me know what you think!
