This recipe is just an easy go-to for me. And this time it was REALLY good for some reason. Maybe it was the new gravy I tried? I don’t know, but this remains a tried-and-true meal in my house. Remember: this requires an Instant Pot (my FAV), but here is an alternative recipe.

You probably already have a fav burger technique, but if not give this a try. It was a success for us again. This time I DID try the baconnaise… minus the bacon. I LOVE my bacon, but I just didn’t want to bother this time, and I didn’t miss it. The sauce is YUMMY even without it. If you try it use my FAV mayo recipe to avoid yucky ingredients in storebought and make extra for the rest of the week.

Serve with homemade tartar sauce, roasted potatoes, and sautéed spinach
This is a little more involved than I thought it would be, but if the “Mmm, this is GOOD!” review after one bite tells you anything, you’ll want to give it a try. Bake the salmon ahead of time so it can cool. Make the tartar sauce so it can marinate and get all yummy. Get the potatoes in the oven. Mix up the salmon cakes and start to brown them. Whip up the spinach. I already want to make them again.

Unlike the salmon cakes, this came together faster than I thought it would. And I’ll be danged… it’s DELICIOUS. The chicken and slaw are both SO easy. I didn’t make the pickles this time because I already had my fav Cleveland Kitchen dills on hand for this and the tartar sauce. Then the leftovers… SWOON. This is a total winner that I’ll absolutely make again.

With the bok choy and scallions, this really felt like a soup I grew up getting at a local Chinese restaurant. YUM. I do highly encourage you to look at the ingredients on the potstickers. I waited a long time to try this because of that very thing - I don’t want to steer you to questionable foods. I like the Feel Good Foods gluten free ones at Sprouts, which I’ll pan fry beforehand next time. But get the best quality you can. And add in 1lb of ground chicken or turkey for extra protein.
