Serve with seasoned rice and green beans.

This meal does have some moving parts, but it still works out to be pretty easy. Whip up the cocktail sauce so it can marinate and get yummy. Put on the green beans - because I’m not a fan of al dente veg. Start the rice. Make the shrimp last. It’s delish. Note that the recipe calls for an air fryer, but I just bake the shrimp on a cooling rack/cookie sheet instead.

As soon as I sent last week’s menu I had a #OHNO moment when I realized I didn’t include a meal for Cinco de Mayo! Apologies for that! That’s definitely not the only time we can enjoy some Mexican food, so I figured I’d include now what we had then. Talk about easy… cut the ingredients, toss with spices, bake, ENJOY!

I’m always looking for something different, and this definitely fit that description. It’s also fast to get on the table and REALLY tasty. Note that I used half the cheese called for, and it was just right for us. My daughter said, “Mom this already has broccoli in it. Why are we having cucumber salad, too?” Well, it IS a bit of a heavier dish, so I like to lighten things up sometimes. Plus, more veggies are always a good idea.

My daughter spent the week wrapping up high school, and since this is one of her favorite meals, I decided it was a good time to add it to the menu. Pasta is often thought of as a no-no, but if you focus on ingredients and pair it with some protein, pasta doesn’t have to be off limits. Reminder: this is an Instant Pot recipe. Since it took me a LONG time to find a recipe I love, I don’t have an alternative. Make your usual spaghetti if you don’t have an IP, but make sure to include meat!

Surely delicious on its own, I have to add in protein for it to be an option for my family. To do that, I simply brown 1lb of ground turkey (or chicken), then add the onions and garlic, then proceed with the recipe as written. It’s SO easy to get on the table for a weeknight meal. Then the leftovers for lunch - or even breakfast! - are another plus.
