Note: I got ravioli and it wasn’t as much as the pic makes you think. But it was perfect….a rich few bites on the side. I also didn’t combine everything at the end. I know better than that by now, fragile pasta! Delicious seasonal meal!

I’m all about making things easier in the kitchen. So I did this recipe a tiny bit differently than the recipe says. I cut the bacon into pieces, cooked it until crisp, removed it from the pan, and then cooked the chicken in the bacon grease. Hubs loved it and it’s delicious leftover.

Not a ton of reviews, but I’m always looking for new (and easy) ways to make salmon. I tried the brine in the recipe and didn’t notice a big difference. One day I’d like to make my own pesto, but store-bought makes this SO easy. Note though… don’t skip the pine nuts. They really MAKE the dish!

I’m usually a grass fed ground beef girl but just don’t like the texture of it in meatloaf. So I went with a cleaner but not grass fed ground beef from Publix. I also skipped the brown sugar in the glaze because, come on now… it’s sweet enough with the ketchup! Another big hit with the fam!
