There’s something so simple and comforting about this dish. And the cucumber salad complements it perfectly with something cool and refreshing and a nice crunchy texture.

I intended to make this version on stovetop but of course didn’t start it on time. So yet again, Instant Pot to the rescue!
I also already had some sweet potatoes on hand, so I used those. I probably cut them tooooo small, so I’ll keep them bigger next time. Still… so delish… this is a keeper for sure.

A simple one-pan meal that’s packed with flavor.
Tips: Don’t skimp on the red onion. I made that mistake one time thinking it would be too much. It’s not. It NEEDS that red onion. Also, save yourself LOTS of time and get already peeled shrimp, and don’t leave the tails on like the picture shows. Who wants to be picking at those during a meal!?!

I usually double this recipe for my family because I want ample protein - and leftovers. It could easily become a carb-heavy meal, and that’s why I make sure to add the slaw. It’s also easiest to make this on a griddle of some kind if you have one so you can make multiple at once.

My youngest who isn’t so young anymore at 17, requested this. She’ll be off to college soon, so I’ll make what she requests as long as I can.
I still do my thing on these simple meals, though. Pre-made soups are often full of gross ingredients so I make my own. This one is SO easy. Skip the croutons since it’s paired with grilled cheese, and I usually add either ham or turkey to the sandwiches for added protein. Note: You’ll need a stick or regular blender to finish it off the soup... but it’s worth it!
