Turkey Broccoli Cauliflower Soup

Rating: Unless I missed it, no rating was given, but a) there are tons of rave reviews in the comments and b) as the cook I give it 5 stars because it’s SO healthy and super simple to make.
Note: I add meat to this recipe for a hearty protein. You can use any ground meat you’d like. I used ground turkey this time and included that in the shopping list. Just brown it along with the onions and garlic, and continue on with the recipe as written. Easy peasy.

Tip: I doubled the butter topping to ensure we had enough sauce.
You might already have everything but the fish! Cod was on sale at my favorite store, Sprouts, but the recipe author mentions any flaky fish. I also recommend you aim for wild caught, but go with what works for you and your budget.

I don’t use this recipe because it’s “low carb.” I use - and LOVE - it because it’s similar to pot roast but even quicker to make. Perfect for this time of year.
The IP recipe is * chef’s kiss * but here’s an alternative if you don’t have an IP. Ratings look good, but I haven’t personally tried it.

Tip: This recipe calls for hoisin sauce, but beware that many store-bought versions are full of gross ingredients. Look for one without caramel color, other dyes, or other ingredients that aren’t actually food. Or make this easy version, for which you may have all ingredients already on-hand!

Nutritional Therapy tip: Make the eggs (however you like them) and bacon the stars of your plate. Saute some leftover veggies to go on top for added nutrients. Let the French toast be truly on the side, not the main part of your meal.
Bake the bacon (save the grease!), make the French toast, cook your eggs last. Quick and easy!
