Apple Butter Pork with Cheesy Grits

I had to add this one in once again at the tail end of fall. Besides, I had leftover apple butter to use up! Everyone loved it just as much this time around. It’s a perfect easy crock pot meal for this busy holiday season.
Smoked Sausage

Serve with roasted potatoes and roasted or steamed cauliflower
I like the Kiolbassa brand of smoked sausage and tend to put them on the menu when they’re on sale. They make for such an easy, quick meal, and I really need that simplicity during the holidays when there are a million things to do!
Get your potatoes (and veg, too, if you’re roasting them) in the oven, wait about 15 minutes or so, get the sausages started, and finish up with steaming the veg if you’re going that route. EASY!

What an easy way to make salmon! My family doesn’t love salmon, truth be told. But it’s so full of nutrients and essential fatty acids, I still weave it into my menus. Usually for my sauce-loving family, that means finding recipes with delicious sauces. And… it usually works. This one certainly did! It’s a keeper.

I know I included this somewhat recently, but we had a family birthday this week and this was requested. And let me tell you… it was a HIT. Seriously, for being such an old-fashioned meal, it was comforting and, quite honest, decadent with those potatoes. Oh man… THOSE POTATOES! Worth the extra effort and splurge.

Tip: use frozen pre-made crust… it’ll make the meal so easy! I like a gluten free cauliflower crust.
Pizza is one of those things that gets a bad rep, but they aren’t all bad! As usual, I can control the ingredients when I make it. But I like this one because it’s an interesting flavor profile and (this is a biggie) it has a good amount of protein!
