Had to go back to a family FAVORITE here at the end of 2024. Makes me giddy just thinking about it! Here’s a slow cooker version if you don’t have an Instant Pot for the original recipe. EnJOY!

Note: This is an Instant Pot recipe, but if you want to bake it instead, use all the same ingredients and bake until done at 375 for 25-35 min. In an IP this shreds like MAGIC, so just know it won’t shred quite as nicely if baked. Yes, I LOVE my Instant Pot. Oh, and get whatever taco fixings you like if they’re not on my list!
SPECIAL - New Year’s Meal

This is my family’s FAVORITE meal of the WHOLE YEAR! I like it so much I sometimes even serve it around mid-year just to scratch that itch. :)

Allllll the pork is a sign of prosperity. The black-eyed peas symbolize wealth. The greens are a sign of good fortune. The cornbread represents gold. Who doesn’t want all that to usher in a New Year?
Also, the sides are the star of the show for me in this meal, so I leave the ham up to you. Make what you like best!

The recipe calls for cooking in an air fryer, which I don’t have because MOST are lined with non-stick coating that contains chemicals that leach into the food. ICK. So I bake the shrimp on a cooling rack/cookie sheet instead. It’s still super easy and delicious, especially with this simple homemade cocktail sauce.

It’s soup season, and this is a hearty one!
Some tips… I prefer to get a pastured ground meat when at all possible and then add my own “Italian sausage” seasoning. My fam also doesn’t love the anise flavoring, so I usually leave that out. I also prefer beans from pouches to avoid the toxins in tin cans. My fav store, Sprouts, has pouches from the Green Valley brand.
